Smoky Mushroom Frittata

 

Ingredients

  • 8 eggs

  • 4 strips applewood smoked bacon

  • 8 oz. mushrooms

  • 3 oz. cheddar cheese

  • Handful of spinach and arugula mix

  • Salt and pepper for taste

  • 1 tsp EVOO

 

Directions

  1. Preheat oven to 400 degrees F.

  2. Slice the bacon and fry in 1 tsp. of olive oil in a 10-inch non-stick ovenproof frying pan on a medium heat for 2 minutes. 

  3. Add the mushrooms, season with salt and pepper, then fry for 5 minutes - or until golden, tossing regularly.

  4. Lightly beat the eggs, then pour into the pan and bomb over nuggets of cheese. Transfer to the oven for 10 minutes, or until nicely set. 

  5. Loosen the edges with a spatula, then slide onto a board. Top with a handful of arugula and spinach.
