Cheesy Cauliflower Mash

 

Ingredients

  • 1 head of cauliflower

  • 2 tbsp. heavy cream

  • 1 tbsp. butter

  • 2 oz. dubliner cheese

  • salt and pepper

Directions

  1. Clean and trim the cauliflower, breaking it into medium-sized pieces.  

  2. Place in a microwave-safe bowl with the cream and butter.

  3. Microwave uncovered, on high for 6 minutes.

  4. Stir to coat the cauliflower with cream/butter mixture. Microwave for an additional 6 minutes.

  5. Remove mixture from the microwave & combine with cheese in a high-speed blender or food processor.

  6. Puree until smooth.

  7. Season with salt & pepper for taste.
