Baked Garlicky Mushrooms & Sausage

 

Ingredients

  • 4 garlic cloves, minced

  • 20 cherry tomatoes, halved

  • 16 oz. Baby Bello Mushrooms, stems removed

  • 2 tsp. EVOO

  • 3 tbsp. Balsamic vinegar 

  • 1.5 oz. white cheddar cheese

  • 3 oz. Italian sausage link

  • Salt and pepper

  • Optional Italian spices (basil, oregano, rosemary, thyme)

 

Directions

  1. Preheat oven to 400 degrees Fahrenheit.

  2. Toss garlic, tomatoes, and mushrooms together in an oven-safe dish.

  3. Drizzle balsamic and olive oil over the top. Sprinkle with salt, pepper, and desired herbs.

  4. Cook in oven for 10 minutes.

  5. Meanwhile, boil enough water to completely submerge sausage, boil for 10 minutes.

  6. Remove sausage, chop, and brown in a pan on stove-top until golden.

  7. Remove veggies from oven, crumble cheese and stuff inside mushrooms.

  8. Place back into the oven to bake for an additional 12 minutes, until cheese is brown and tomatoes are cooked down.

  9. Add sausage, sprinkle remaining cheese, and serve.
