Soft Scrambled Eggs

with Burrata on Toast

INGREDIENTS

  • 4 eggs

  • 2 tsp butter

  • 4 oz. burrata

  • 4 slices of 50 calorie bread, toasted

  • fresh herbs of choice (rosemary, basil, oregano, chives, etc.)

  • flaky salt and fresh cracked pepper

 

DIRECTIONS

  1. In a medium bowl, crack the eggs and whisk them together.

  2. In a large nonstick skillet, melt the butter over medium-low heat. Once it is bubbling, carefully pour the eggs into the hot pan and season with salt and pepper.

  3. Slowly drag a spatula along the bottom of the pan allowing the eggs to cook slowly and evenly.

  4. Once the eggs are cooked, season them with additional salt and pepper, depending on your preferences.

  5. Divide the eggs between the 4 pieces of toasted bread. Add a spoonful of burrata on top of each one. Top with herbs of choice.
