High Key Pancakes

Ingredients

  • ½  cup Highkey™ Pancake Mix

  • 3 tbsp unsweetened almond milk

  • 2 tbsp coconut oil

  • ¼ tsp vanilla extract

  • 1 egg

Optional Toppings

  • 2 tsp butter (+1 Block)

  • Walden Farms or other sugar-free maple syrup

Directions

  1. Preheat griddle/pan to medium heat.

  2. Pour ½ cup pancake mix into a mixing bowl.

  3. Melt coconut oil in a small container in a microwave for 30 seconds - mix with a spoon until liquid & do not overheat. 

  4. Add the egg, coconut oil, almond milk, and vanilla extract to the pancake mix. Mix until well blended with a rubber spatula or large spoon. Let the batter rest for 3 minutes.

  5. Spray griddle/pan with oil. 

  6. Place 2 tbsp pancake batter onto the heated griddle/pan, spacing each pancake 4” apart.

  7. Cook 2-3 minutes per side.

  8. Serve with desired toppings and enjoy!
