Creamy Cauliflower Chowder

 

Ingredients

  • 2 teaspoons butter

  • 1/2 cup diced onion

  • 5 garlic cloves, minced

  • 1/2 cup diced carrots

  • 1 head of cauliflower, cut into small florets

  • 2 cups chicken broth

  • 1 teaspoon freshly ground pepper

  • 1/2 teaspoon dried oregano

  • 1/4 cup cream cheese

  • Salt to taste

  • 2 slices of bacon crumbled for topping

 

Directions

1.    In a large pot sauté the onions and garlic in the butter until the onions are soft.

2.    Add in the carrots, cauliflower, chicken broth, oregano, salt, and pepper. Bring the mixture to a boil, then lower the heat to a simmer. Cook for 15 minutes or until the cauliflower is tender.

3.    Remove from the stove. Using a hand blender, blend the mixture until creamy.

4.   Add the cream cheese. Simmer for another 5-10 minutes and then remove from the stove. Top with bacon and serve hot.
