Angel Food Mug Cake

ingredients

  • 1/4 cup egg whites

  • 1/4 tsp vanilla extract

  • 1/4 cup blanched almond flour

  • 2 tbsp erythritol

  • pinch of cream of tartar

  • 1/8 tsp sea salt

  • 5 strawberries

  • 4 tbsp whipped cream

directions

  1. Preheat oven to 350 F.

  2. With a mixer on high, beat the egg whites, cream of tartar, and vanilla extract until stiff peaks form.

  3. In another bowl, combine the almond flour, erythritol, and salt.

  4. Gently fold the flour mixture into the egg whites.

  5. Divide the mixture into two 4 oz ramekins or mugs.

  6. Bake for 15 minutes.

  7. Garnish with whipped cream and sliced strawberries & serve!
